Ambrosia (self-titled 1975 and Somewhere I've Never Travelled 1976) made very tasteful use of this technique. Dream Academy (A Different Kind of Weather, produced by David Gilmour), although not prog(but a nice listen) also uses this quite a bit (to the point of sounding like a Pink Floyd album in places). Was also done by Supertramp on at least a couple of albums. Also Jellyfish (my favorite Beatles-sounding non-prog band), Santana's "Caravanserai", and on the best sounding, best produced, tightest in-the groove-bass-playing, best meaningful lyrics (but non-prog) album you might ever find in a bargain bin, Toy Matinee!
This was a great question, and would make a cool theme.
